Ingredients
Basic Tofu Scramble
Oven Roasted Breakfast Potatoes
~1 3/4 cups pinto beans (we suggest our Sweet Simple Beans recipe)*
3 1/2 cups steamed kale or uncooked spinach
Shredded cheddar cheese (we used Follow Your Heart)
7 giant (12-inch) flour tortillas
Parchment paper
Aluminum foil

Instructions
Preheat oven to 425°F and line an enormous baking sheet with parchment paper or a silicone baking mat.
Add all of the meals for the breakfast potatoes into an enormous bowl and toss nicely to totally coat. Evenly distribute onto the baking sheet and vicinity into the oven for 30 minutes, or till the potatoes are totally cooked through. Set apart and funky to room temperature.
