DIRECTIONS:
Heat butter in a big stockpot over medium-high warmth till melted (or warmth the olive oil till it's shimmering).  Add onion, carrots, and celery.  Saute for 6-7 minutes, stirring frequently, till the onion is mushy and translucent.  Add within the garlic and mushrooms, and saute for yet another 2-3 minutes, stirring frequently, till the garlic is fragrant.
