These Vegetarian Quesadillas are the best quick weeknight dinner or lunch! Filled with black beans, sweet potato and avocado these are healthy and delicious!

- 1 tsp Jalapeno
- 1 Sweet potato, Large

- 1 Lime juice
- 1 Your favorite salsa
Baking & Spices
- 1 tbsp Easy homemade taco seasoning
- 1 Pepper, Mini Orange
- 1 Red pepper, Mini
Oils & Vinegars
- 2 tsp Olive oil
Bread & Baked Goods
- 4 Flour tortillas, Medium
Dairy
- 1 tbsp Butter
- 1 cup Cheddar or pepper jack cheese
- 1 Sour cream
