We can all agree on a few things here: Great carne asada should taste, first, of the beef. It should be buttery, rich, and juicy, with a charred, smoky flavor. It should be tender enough to fill a taco or burrito, but substantial enough to be served as a steak. And the marinade should have a good balance of flavors, with no single ingredient overwhelming any other. This recipe produces the carne asada of my childhood dreams.

Ingredients

Meat
- 2 lbs Skirt steak
Produce
- 2 tbsp 2 to 3 limes, fresh juice from
- 3/4 cup 2 to 3 oranges, fresh juice from
- 3 Ancho chilies, whole dried
- 2 Chipotle peppers, whole
- 1 small bunch Cilantro
- 6 medium cloves Garlic
- 3 Guajillo chilies, whole dried
Condiments
- 2 tbsp Red boat fish sauce, Asian such as
- 2 tbsp Soy sauce
Baking & Spices
- 2 tbsp Brown sugar, dark
- 1 tsp Coriander seed, whole toasted and ground
- 1 Kosher salt
Oils & Vinegars
- 2 tbsp Olive oil, extra-virgin
Nuts & Seeds
- 1 tbsp Cumin seed, whole toasted and ground
Bread & Baked Goods
- 1 Corn or flour tortillas
