MOM’S CHICKEN ENCHILADAS
Yep, one other recipe from my mom’s kitchen. What can I say? I love her cooking. This one got here from a chum of hers years and years ago (like perhaps even 30+ yrs ago).
My daughter asks for it for her birthday dinner each yr (my children get to elect no matter they desire for food on their birthday. My six yr antique selected sushi this year…..) and I desire it over “traditional” enchiladas any day.

CHICKEN ENCHILADAS

Ingredients
3 hen breast cooked, shredded
¾ c sour cream
10.5 oz cream of hen soup
1 c milk
¾ c salsa
12 corn tortillas
2 c cheese shredded
Instructions
Mix soup, milk & salsa.
Heat in microwave on medium heat, 3 minutes.
Add sour cream, warmth 1 minute.
Take 1 tortilla & region in greased 9x13 pan.
Put 1 ½ tbsp chicken, 1 ½ tbsp cheese, 2 tbsp soup blend within the center and roll up setting part on backside of pan.
Reserve about 1 c soup blend and 1 c cheese to disguise complete casserole. Bake at 350F for 30-40 mins or till bubbly (may be protected for extra moist enchiladas).
