Cajun chicken meatballs in a creamy sauce with tons of onions, garlic, peppers and mushrooms. Serve these meatballs on top of egg noodles or with crusty bread and a salad, it is so delish!

Ingredients

∙ Makes 18-22 meatballs

Meat

• 1 1/4 lbs Ground chicken

Produce

• 2 tbsp Basil
• 4 cloves Garlic
• 1/2 cup Mushrooms
• 1/2 cup Onions, yellow or red
• 2 tbsp Parsley

Refrigerated

• 1 Egg, large

Canned Goods

• 1 1/2 cups Chicken broth, low sodium

Baking & Spices

• 2 1/3 tbsp Cajun seasoning, low sodium
• 2 tbsp Flour
• 1/2 cup Peppers, red or yellow

Oils & Vinegars

• 3 tbsp Olive oil

Bread & Baked Goods

• 3/4 cup Panko

Dairy

• 1/4 cup Parmesan cheese, grated
• 1/2 cup Sour cream
