One Pot Moroccan Chickpea Quinoa Salad



Sweet & savory 30-minute Moroccan chickpea quinoa salad made in a single pot. Delicious flavors and the correct vegetarian meal to prep for lunch!

Yesterday Abra and I went to Studio Three and did their Ellie Goulding & Lana Del Rey themed biking class. It was the primary time I had hit the gym in virtually a month (except for that one time I had 10 mins and did 50 squats + lunges in Australia and couldn’t stroll for days after).

Anyway, I can’t inform you simply how nice it felt to get shifting again, even when it was 45 
You recognize what else feels good? Making food at residence again. Last nighttime time I made my very favourite and web noted wholesome turkey chili with a bit of cheese and tortilla chips. And now I’m fully yearning this chickpea quinoa salad with bright moroccan flavors. I can’t EVEN describe how delicious it is.

K wait possibly I can…

It’s like little pops of style dancing on my tongue within the moroccan warmth with candy pops of cranberry style and crunchy toasted nutty almonds all with the freshness of parsley in each bite.

What? I tried.




Abra and I made this salad a number of weeks ago and couldn’t cease raving about it. We blended it in with a number of different recipes we created, but this one was by way of way of far our favorite. It’s easy, made in a single pot, and has remarkable flavors.



Simply put, I assume you have to make it ASAP for lunch. This is considered one of my favourite quinoa salads of all time; it’s fully effective to deliver to parties, pack for lunch, or pair with roasted fowl for dinner.

Sweet & savory 30-minute Moroccan chickpea quinoa salad made in a single pot. Delicious flavors and the correct vegetarian meal to prep for lunch!

INGREDIENTS
½ tablespoon coconut oil
1 medium yellow onion, diced
1 teaspoon flooring turmeric
½ teaspoon cumin
½ teaspoon cinnamon
1/2 teaspoon salt, plus further to taste
Freshly flooring black pepper
1 cup raw quinoa
2 cups vegetarian broth (or water)
1 (15 ounce) can chickpeas, rinsed and drained
⅔ cup dried cranberries
⅓ cup finely diced flat leaf parsley
½ cup sliced toasted almonds

INSTRUCTIONS
Add coconut oil to a enormous pot and region over medium heat. Once oil is hot upload in onion and sauté till onion is translucent, about 3-5 minutes. Stir in right here spices: turmeric, cumin, cinnamon and salt and pepper; cook dinner for 30 seconds more.
