Some of you might be wondering…why?

WHY THIS IS THE BEST GINGER GARLIC NOODLE SOUP WITH BOK CHOY
The broth. The key to a delicious and memorable brothy soup is the broth. Unfortunately, achieving this wonderous broth always takes HOURS (learn methods to make bone broth here!). The broth on this Bok Choy Soup? Twenty minutes, my friends.  Thirty minutes tops.
It tastes so so much like Phở. Ok, I know, here is essentially the identical as what I stated above. But it merits NULL issues as it kinda blows my thoughts a little.
It’s like chook noodle soup…but better.
This Bok Choy Soup will battle your flu. Now, I can’t declare that it's going to treatment something (I’m no longer a doctor), but issues like ginger and garlic are there to assist whilst you truly sense like crap.
It’s totally customizable. In different words, you've got the base, but that doesn’t imply you can’t move wild with it. This bok choy soup loves all of the veggies and truly loves shrimp.
INGREDIENTS IN THIS GINGER GARLIC NOODLE SOUP WITH BOK CHOY
Shallots and inexperienced onions (white AND inexperienced parts)
Ginger
Garlic
Low-sodium chook broth (or veggie broth/water to hold it vegan)
Soy sauce (or Tamari to hold it gluten-free)
Bok Choy
Mushrooms
Rice noodles
Star Anise
That’s the primary total record of what you've got to make this superior soup. You’ll also want salt, pepper, and red chili flakes.

WHAT IS STAR ANISE?
This is one in all of probably essentially the foremost widespread questions I get from readers planning to make this recipe. Every different component is pretty simple to find, but complete star anise? What’s this? Star anise is the seed pod from the fruit of the Illicium verum plant. Shaped like a star, star anise has six to eight points, every containing a single seed.

This Ginger Garlic Noodle Soup with Bok Choy Recipe calls for 2 complete star anise. The star anise isn't intended to be eaten. I repeat- you don't consume the complete star anise. Star anise adds superb taste to soup, sauces, and marinades, but tastes terrible whilst eaten whole. Remove the seed pod after simmering the broth.

What does star anise style like? Star anise is a mixture of sweet, spicy (not the chili sort of spicy), and truly comparable to licorice. As individual who principally hates licorice, I ensure you won’t truly sense like your slurping a bowl of licorice (unless you overlook to take away the star anise pods and chew into one).

No thought the position to purchase star anise? Most principal supermarkets promote this must-have spice, but just in case,

If you're one in all these of us who fully HATE star anise, merely exchange with cinnamon sticks. The taste won’t be pretty the same, but it's going to nonetheless be delicious.

DIFFERENCE BETWEEN BOK CHOY AND BABY BOK CHOY
Since a number of of you've got asked, I did just a bit study and here is what I even have found.

Baby bok choy and Bok choy are essentially the identical things.
The difference is that child bok choy is harvested previous producing smaller, extra delicate leaves.
This skill that child bok choy is so so much sweeter than bok choy and is always served instantly in soups (oh HAY!) and even in salads.
Bok choy, at the different hand, is so so much heartier, appropriate for longer cooking instances as in stir-frys.
That said, this Ginger Garlic Noodle Soup with Bok Choy might technically deal with both child bok choy or bok choy. Just depend that bok choy shall be barely extra bitter and so much less sweet.

BOK CHOY SOUP FREQUENTLY ASKED QUESTIONS
Can I freeze this soup? Yes and no. Yes, you might fully freeze the broth. However, I don't suggest freezing this soup with the vegetables or the noodles. Fortunately, the vegetables and noodles on this bok choy soup take only minutes to warmth together.
Do I pre-cook the noodles? No no no no nooooo. Rice noodles prepare dinner tremendous fast. Add the noodles to the broth only a number of minutes previous than you're competent to eat.
Does this bok choy soup style nice leftover? Similar to freezing, this soup ought to also be eaten leftover but tastes greatest fresh- unless, of course, you make a enormous batch of broth and hold the vegetables and noodles separate.
