Seekh #Kebabs #(Pakistani #Spicy #Grilled #Ground #Meat #Skewers)
When a Pakistani friend of mine in college introduced me to the little packets of pre-blended seekh kebab spices at our local Indian market, it was something of a revelation. Oh, this is what a balanced spice blend tastes like. These days, though, I like to up the ante and cook seekh kebabs up from scratch, using a homemade mixture of spices.

Ingredients
∙ Serves 6-8
Meat
- 2 lbs Ground lamb or beef
Produce
- 2 Bay leaves, whole
- 2 cups Cilantro, loosely packed fresh leaves
- 1 Cucumbers
- 4 medium cloves Garlic
- 1 1/2 tbsp Ginger, fresh
- 1 Red onion, roughly chopped (about 6 ounces; 170g), medium
- 1 Thai bird chilies, green
Baking & Spices
- 1/2 tsp Cayenne pepper
- 2 Cloves (1g), whole
- 1 1/2 tsp Coriander seed, whole
- 3 tsp Kosher salt
- 2 tsp Paprika, sweet
- 2 tsp Peppercorns, whole black
- 1 1/2 tsp Sugar
Nuts & Seeds
- 1 tsp Cumin seed, whole
Deli
- 1 Cabbage or 1 recipe spicy cabbage and red onion slaw
Other
- 1 teaspoon (4g) amchur powder (see note)
